Campsite cooking: Spicy eggs rancheros

a00fac37-15ed-46c4-b352-a67c6fbdc303

  More Camping recipes

This fiery breakfast dish is inspired by the Mexican morning favourite, huevos rancheros, and makes an easy but exotic alternative to a traditional British fry-up on the campsite.

It can be served on its own, with warm bread or sautéed potatoes, left over from last night’s dinner.

Ingredients

  • 4 free range eggs
  • 1 tin chopped tomatoes
  • 2 fresh chillies
  • 1 clove garlic finely chopped
  • 1 tbs vegetable oil
  • 1 tsp ground coriander
  • 1 tsp sugar
  • Half tsp ground cumin
  • Half tsp chilli powder
  • Salt and black pepper
  • Coriander

Cooking instructions

Step 1:

Heat up the oil in a frying pan, then gently cook all the ground spices for up to a minute, making sure not to burn them.

Add the garlic and quickly empty in the tin of tomatoes. Fill the tin with water and add to the pan.

Step 2:

Season well, add the sugar and stir. Leave to simmer until dark red in colour – this should take approximately 20 minutes.

Step 3:

When the sauce is thickened, make four indentations in the liquid and crack an egg in each. Cover the pan with a lid or plate to keep in the steam, and cook over a very gentle heat for around 10 minutes, or until the eggs are cooked how you like them.

Step 4:

When the eggs are cooked, take off the heat and garnish with chopped fresh coriander leaves and sliced chilli if you like it really spicy.

Serve on a plate with crusty bread or toast for dipping.

Top tip:

Sprinkle with hot sauce for some extra kick.

Outdoor Revolution Twin Burner Gas Stove and Grill

The Twin Burner Gas Stove and Grill lets you up your campsite cooking game considerably, offering the perfect blend of high performance, compact size and style. What makes it unique is the way it operates.

Unusually for a double burner and grill, it runs off a 450g screw-fitting butane/propane canister – which Outdoor Revolution also supplies – rather than a heavy, refillable gas cylinder, cutting down on space and weight during transportation. You only pay for the gas you need to use when you are away, whether it be for a weekend or an extended trip.

Expect to pay: £99.99
